My fav summer salad is this well loved pasta salad from Chelsea's Tearoom.  I double it.

When people eat it, get ready for eye rolls!!!

 

I DO increase the dressing by 20% and add a little more dried dill.

Love the addition of a chopped bell pepper.

Any tossed salad with varied greens/veggies and lots of color. I'm into the current trend of chopped salads, at the moment.

 

But, my all time favorite is home grown tomatoes and basil, with mozzarella, and a splash of balsamic vinegar. Great summer salad.

I love making a cheese tortellini salad. Easy peasy. Cooked/chilled tortellini, sliced black olives and cherry tomatoes, feta cheese crumbles  tossed in Ken's greek salad dressing. 

 

I also eat a lot of lettuce, tomato, cucumber, etc salads in summer with a protein like some cheese or chicken or hard boiled eggs. I enjoy them more in the warm weather when local/fresh veggies are available.

You'll love Chelsea's pasta salad.

It was served beside a piece of qiiche, a small scoop of chicken salad, and some mixed fresh fruit.

@ECBG It sounds so good! I have everything on hand except for the Buttermilk and dill so I just added them to my shopping list. Thanks so much for posting this! Heart

Remember you can always use milk and pour a little vinegar in it.  Stir.  Sit 5 min!  I was a Home Economics teacher, although, I embrased the design side of our major.

With dried dill, I often make Dill sauce for salmon or salmon patties.

 

Dill Sauce

1/2 C sour cream

1/2 C mayo

2-3 TBSP Drilled Dill

JUice of 1/2 lemon.

 

Chill 4 hrs.

 

Dried spice is weaker than fresh spice.

My favorite is potato salad followed by pasta salad.  However, I eat very little of either one since I'm a diabetic.  

Knowledge is knowing that a tomato is a fruit, but Wisdom is knowing not to put it in a fruit salad.

I like to indulge in a great big Caesar salad.  Homemade, not the bagged kind.  With fresh dressing, croutons & grated Parmesan cheese.

I do like pasta salad and potato salad.  I use my late mom's recipes but my favorite salad now is cucumber salad with red onions and Italian dressing.
