My favorite is very simple.  Baby spinach leaves with mandarin oranges , Russian Dressing. Sometimes I'll add a chopped hard boiled egg. Mmm.

Our favorite salad any time of year is what we call a "taco salad".  

 

1 can (from Costco) of STAGG  beef chili with meat,  beans and "a kick of green chiles".

 

Heat  in a saucepan with half a can of vegetarian refried beans and half a can of Rotel chopped tomatoes with green chiles.

 

Serve hot mixture over iceberg lettuce, chopped fresh tomato,  shredded Cheddar to which some ranch dressing was added earlier.

 

Top the hot mix with heated queso cheese sauce mixed with remaining Rotel tomato/green chiles

 

Serve with tortilla chips lining the bowl and placed on top. 

 

Lately we've liked using Dorito Nacho Cheese Chips, which are a lot spicier than the ordinary Tostito tortilla chips we used before.  All depends on your taste for hot spice and my DH can't seem to get enough of it these days.

Re: It makes it so easy to have taco salad when you just unthaw the meat and heat.

 

The prefix 'un' means 'not', as in uncomfortable, unprepared, uncertain, etc.  As used above, the meat is 'not thawed' or the meat is to be  refrozen.  To thaw allows something to be relievd of its iced/frozen state.

We love allrecipes Antipasto Pasta Salad with a few tweaks.

 

 

  • 1 pound seashell pasta
     
  • ¼ pound Genoa salami, chopped
     
  • ¼ pound pepperoni sausage, chopped
     
  • ½ pound Asiago cheese, diced
     
  • 1 (6 ounce) can black olives, drained and chopped
     
  • 1 red bell pepper, diced
     
  • 1 green bell pepper, chopped
     
  • 3 tomatoes, chopped
     
  • 1 (.7 ounce) package dry Italian-style salad dressing mix
     
  • ¾ cup extra virgin olive oil
     
  • ¼ cup balsamic vinegar
     
  • 2 tablespoons dried oregano
     
  • 1 tablespoon dried parsley
     
  • 1 tablespoon grated Parmesan cheese
     
  • salt and ground black pepper to taste

First off, we half the salad ingredients  and delete the pepperoni, using all genoa salami.  Also use only one green pepper, and use halved grape tomatoes.  Keeps well.
