What Is Your Preferred "Summer" Salad..

Potato, macaroni, pasta?  Yes, they can, and are eaten, year round but  I tend to think of them more in summer. I like them all but would go for potato or macaroni first.

 

I have macaroni cooling now for mac salad.  I somehow ended up with 2 dozen eggs so I hard boiled a dozen. Some will go in my salad and the rest will be snacked on.  I went rogue. I had 1/2 box of small penne but no elbow macaroni (need to do a grocery run) so I used what I had on hand.

 

Will make tuna melts and have a scoop of mac salad for supper.  Easy and little clean up after we eat.  My kind of night. Leftover salad for lunch tomorrow is a plus.

Sounds good to me. I'm having mac salad and a tuna sandwich for supper and chips, too.

@catter70  Great minds think alike.  DD will have a tuna sandwich but I do love a tuna melt. I may have her stop and get a loaf of rye bread for my melt. Still good on white bread but rye is the best.

@CrazyKittyLvr2  all that you mentioned . I have a recipe I believe from DV recipes titled dill pickle pasta salad(?) that is a nice savory one .

 

I also appreciate a chopped lettuce salad  iceberg . I use one of those 'oblong choppers' ( I bought mine at Aldi's) I like having similar sizes of everything. I usually use the 1/2 " blade. I think they dressing blends nicely on it. Just about everything can be chopped. I usually use a knife for tomato if very ripe. It is easy peasy IMO. For just DH and myself i just serve in bottom of container.

I love all those salads but I have been in a coleslaw mood lately. So easy using the bagged coleslaw mix.  I make a half bag at a time since it's just for me.

 

1 Tbsp. Cider vinegar,  1Tbsp. Sugar,  1/2 tsp.Montreal steak seasoning,  1/2 cup mayo approx.  Mix all ingredients in  bottom of bowl till dissolved, then mix in cabbage.  Cover and chill a few hours before serving. 

 

Double the recipe for the whole bag of slaw.  So good!

We like Italian pasta salad.  Good for a snack or as a side and can be eaten as a main dish.

We love slaw too.

 

Often I will add some fresh tomato cubed, and/or a crunchy small cucumber.

DH is making a grocery run today and asked if I would like Taco Salad tonight.  It is really good, iceberg lettuce, kidney beans, ground beef, tomatoes, cheddar cheese, onions, taco seasoning, catalina dressing and taco chips on top.

 

We also make pasta salad with shells or macraroni, eggs, cheese, crab meat, shrimp and sweet/sour dressing.

 

Like potatoe salad tho we don't make it, but my neighbor makes a really good potatoe salad and brings some when she makes it.  We trade food with this neighbor frequently and will take her some taco salad tonight.

 

Tuna salad is one of my favorites, but DH doesn't eat it.  I think I will make some for me for lunch the next couple days as it will be much too hot to go out tomorrow and Wednesday.  

 

Edited to change cheddar cheese to taco cheese in taco salad receipe.      Sorry for my errors.
