With all of the wonderful vegetables that can be grilled, stir fried, steamed, and made into salads, sometimes I want a roast after so mmany grilled meats.
This is my fave, and can be changed over to stew easily.
Eye Of Round Roast
Eye Of Roast
Salt and Pepper to taste
Kitchen Bouquet
Preheat oven to 500 degrees
Trim off fat from roast
Brush Kitchen Bouquet heavily on roast top and bottom
Place on rack in pan lined with foil
Bake at 500 degrees 5 minutes per pound for medium rare.
Turn oven OFF -DO NOT OPEN
Leave in oven for 1 and 1/2 hours.
Ready to slice.

@shortbreadloverThat's the beauty of a cold oven. The oven won't be hot but maybe 20 minutes.
To heat leftovers, I put the slices on a rack under the broiler for just a few seconds and turn.

l never buy roasts anymore as they're too much red meat for just one person. Plus I keep forgetting to arrange for financing before I head for the grocery store.

I don't buy roasts anymore, either. Just too much in the way of leftovers. A good steak from the butcher on the grill is plenty and ready in a few minutes.
I was at Whole Foods yesterday. Yee-ouch!

My mom often made an eye round like you do.
She loved beef. She told me they ate mostly chicken growing up, their own chickens
After she roasted the eye round, she had to slice up some for dad and cook his a bit more, he always wanted his beef well well done.
I love medium rare.
I cook for my kids and grandkids every Sunday.
I like a chuck roast in the crock pot.
I don't like my veggies cooked with my meat, I do them on the side.
Mostly potatoes, carrots and onions.
There are rarely leftovers after we all fix a plate.
It's rare but whenever I find a bone-in roast, I grab it.
Most roasts I find are boneless, the bone has the flavor

a chuck roast.
dredge it in some flour.......salt, pepper, garlic powder, onion powder
sear on all sides using a little canola oil or peanut oil or olive oil . deglaze pan with red wine, stock, or even water.
place in large roaster and roast it at about 350 for at least three hours.
with about 1/3 cooking time left, add halved potatoes, carrots, quartered vidalia onions, and sometimes stalks of celery cut into thirds. place lid on pan.
this should create a lot of natural juices/gravy and i add one jar of brown gravy or a packet of beef gravy made with milk instead of water. to make it a bit thicker add in some flour that has been mixed with water or stock or more red wine.
cannot wait until the colder weather comes around!

@software I cook DH's under the broiler a little because he can't tolerate under done beef. I'm totally a med rare gal.
Sometimes I'll do a Knorr AuJus packet over the slices after a few days, or do stir fry or pepper steak (pepper roast).
