Over the past 4-5 months I have put myself  on a nightly dinner salad just making better choices to remain off diabetes meds and keep my blood sugar under control and it's working for me. It's so good and I'm never never tired of it ! Woman Very Happy

 

Romaine or iceberg shredded lettuce

sliced grape tomatoes

shredded parmesan cheese

cooked and sliced jumbo shrimp (or whatever size you like)

Whole wheat croutons (or whatever kind you prefer)

Lite Ceasar salad drsg

 

I stir it all together and enjoy !  I usually buy the already cooked shrimp frozen from the grocery store, thaw, slice and toss in my salad. I have also used Tyson frozen roasted chicken cubes, thaw and toss in my salad, I use lite balsamic salad drsg with the chicken but of course you can use whatever salad drsg you prefer.

I have  a few favorites. I like most any pasta salad. 

As far as lettuce salads, I  make one with romaine, spinach, blueberries, strawberries and chopped chicken with Panera Fuji Apple Dressing. So refreshing in the summer!

I also like one thats very simple and only 4 ingredients. Chopped lettuce (which ever you prefer), shrimp (I chop it into smaller pieces and have used the canned tiny shrimp),  parmesan cheese and Italian dressing.

I think the reason I receive many compliments on my salad is the dressing, not what is in it.  You have to know the right amount of oil and vinegar to use.  That is what works for me. Have a good day!!!!!

I would rather have a good salad than almost anything......except my Tex-Mex. Smiley Happy. I usually buy the kale salad bags and then add to it. Half kale, half baby spinach, Chicken fajita meat and everything but the kitchen sink. I cannot make a small salad, I may Intend to make a small one, but then they grow. For dressing, I like avocado/jalapeno.

Broccoli salad is another favorite. I buy broccoli slaw, add in chopped fresh broccoli, few slices of chopped bacon, dried cranberries, nuts, chopped apples, red onion, sometimes I add in blueberries or/and strawberries. If I make my own dressing it's part yogurt part mayo. If I am lazy, I like the skinny girl poppy seed dressing. Usually I am lazy. Smiley Happy

@cookinfreak, that Fuji Apple Dressing sounds good!

I have been a vegetarian most of my life and also now have to limit the nightshade fruits/veggies. Several members of the family are carnivorous and enjoy a lot of nightshade fruits and veg so often I simply make a salad base and each of us adds what we enjoy to the base.

@SandySparkles The nightshade fruits/veggies are ones such as potatoes, tomatoes, eggplant. I have to really limit them due to having Lupus so I just make a salad base and have bowls of ingredients for others to add to the base mix...that way everyone is happy, which is a win/win! ❤️

Did you know that July 4 was the 100th birthday of the cesar salad?  It was first prepered in Tijuana, Mexico 100 years ago.  On 4th of July we were fortunate the restaurant in which we were eating featured cesar salad.
