Fall and winter I like a loaded pizza. Pepperoni, sausage, mushrooms, black olives, mushrooms, onions, extra sauce, extra cheese. Topped with red pepper flakes and grated reggiano.

Spring and summer, olive oil, sliced tomatoes, fresh mozzarella, fresh basil and garlic.

If Cheese alone counts I have three very favourites. I like a thin crust the best.

I have posted this before.  DH uses sliced ciabatta rolls (Walmart) slightly tamped down.  Lightly dust with olive oil; add sauce and low moisture skim mozzarella for a basic pizza.  Bake @ 425 for about 7 minutes.

( I always have a large batch of homemade marinara in pint freezer Ziploc bags. )

Our two favorite pizzas were:
Foccacia with cheese and olive oil &
Yeasty crust with cheeses and olive oil with herbs
We served with salad...simple but delicious.

Margherita pizza: fresh garlic, fresh basil, fresh Roma tomatoes, and a drizzle of olive oil.

That's in addition to the standard tomato sauce and mozzarella cheese.
