I do use add fresh lemon to enhance flavors.  I may be wrong on this, but I believe another reason to add a splash of lemon juice is to brighten up the color of food. I do that with roasted broccoli or asparagus, for example, and it does make the color more lively and appetizing.

I love fresh lemon squeezed on a baked  potato. Sounds weird...but it is just so good.  A little pepper and salt....mmmmmmm!

I go through a bag of lemons per week. Always in my tea throughout the day and water in the a.m.

 

Steamed broccoli is yum! My father used to put it on pan fried steak. I can easily do that, too! Just never thought to add it to any kind of soups.
