@ECBG I decided to get a head of cabbage and shredded it (or maybe a bag of cole slaw mix).  I'll have to eyeball the amount as I put the casserole together, but I think it'll come out like a deconstructed cabbage roll casserole. I already have this week's dinners planned, so it's on the menu plan for next week. Looking forward to it, I hope my idea works.

Cabbage Roll Casserole
 
I use to make regular cabbage rolls until I found this recipe. Now, instead, I make this and it is as good as the regular cabbage rolls and alot easier.

Cabbage Roll Casserole
Ingredients
Ingredient Checklist
  • 2 pounds ground beef
  • 1 cup chopped onion
  • 1 (29 ounce) can tomato sauce
  • 3 ½ pounds chopped cabbage
  • 1 cup uncooked white rice
  • 1 teaspoon salt
  • 2 (14 ounce) cans beef broth
DirectionsInstructions Checklist
  • Step 1

    Preheat oven to 350 degrees F (175 degrees C).

  • Step 2

    In a large skillet, brown beef in oil over medium high heat until redness is gone. Drain off fat.

  • Step 3

    In a large mixing bowl combine the onion, tomato sauce, cabbage, rice and salt. Add meat and mix all together. Pour mixture into a 9x13 inch baking dish. Pour broth over meat mixture and bake in the preheated oven, covered, for 1 hour. Stir, replace cover and bake for another 30 minutes.

Thanks, @ECBG This one looks good too, except for the rice. I'd swap it out for cauliflower rice.

We're expecting rain turning to snow Tuesday thru Thursday, likely at least a foot f accumulation, maybe more.  W need to bring more firewood up to the garage.

Dinners this week will be:

 

Monday - unbreaded air fryer Buffalo wings, celery with blue cheese, roasted broccoli

Tuesday - bacon, eggwich, roasted Brussels sprouts

Wednesday - Grassfed NY Strip steaks, sautéed mushrooms, roasted asparagus 

Thursday - Grilled chicken Caesar salad 

Friday - cabbage roll casserole, green beans, leftover strawberry jello dessert

Saturday - bacon cheeseburgers on lettuce wraps, rossted broccoli, maybe keto onion rings

Sunday - leftover cabbage roll casserole, green beans

 

Everyone stay safe, warm, and dry.  Stay home, if you can .
