Mashed avocado mixed in cottage cheese with diced tomato a little salt/pepper, looks like guacamole, eat it with chips or crackers.

We always at least grill out and add a salad and green beans.

I'm  a Schwan's fan.  Love their baked chicken breasts. Put 1 breast, some fries or tater tots in the toaster oven.  It's preset, so just push a button...that's not cooking...20 minutes, ready to eat "as is" or make a sandwich!

 

I roast veggies and always have them in the fridge, ready to eat.  They are even good cold.  Fruit for dessert if wanted.

Ohhh me too! I love Schwan's. So convenient for summer months especially.

@kindred cats I love cottage cheese with Hunts or Red Gold stewed tomatoes!  It's a real favorite lunch of mine.  I like the tomatoes out of the can, at room temperature with the cold cottage cheese!

-Greens salad with shredded Parmesan cheese

-tuna salad

-egg salad

-cheese sandwich

-small curd cottage cheese with canned cubed peaches

-Yogurt (blueberry, orange are faves)

-fruit salad (apples, mandarin oranges, bananas)

-large blueberry muffin with cubed colby jack cheese on the side

-some deli salads or entrees

-ice cream with banana slices

DD and I like buying/making an olive tapenade with a  baguette,   caesar salad in a bag and some fresh fruit, like water melon. And even a few pieces of salami or prosciutto and fresh mozzarella---Have a wonderful deli with a charcutterie counter that has so many yummy things. And then they make the best tuna sammie on a wheat berry bread that we indulge in too.

I posted today in the monthly "what's cooking" thread that I've been craving a traditional wedge salad.  I'm making small ones to go with our dinner but I could be very happy with a large one as a meal.
