Meatloaf with mashed potatoes is a cold weather favorite of ours. We eat more soup and stews too.

I love reading what everyone likes to cook (and eat). I think home cooking is getting to be a lost art. So many younger people order-in, eat out, get take out, etc. I live alone and cook every day unless my kids visit and we go out.

Yesterday I made a pot of Panera's chicken and wild rice soup. Delicious!
Then I saw that Costco's Lobster bisque soup was on sale and bought that.
I really prefer soup and stew during cold weather.

Like @AuntG , we like meatloaf with either mashed potatoes or mashed cauliflower or augratin potatoes. We also love Pioneer Woman's salisbury steak with either mashed potatoes or mashed cauliflower. Mashed cauliflower mimics mashed potatoes without the carbs-no, it doesn't taste quite the same but it is quite good! Chili -red or white-is a staple as is Tortellini and Sausage soup that was posted by @lavendersage who used to post here years ago. We almost always start the New Year with a dish posted by @sue-p, who also used to post here years ago for pork butt and sauerkraut that is served with mashed potatoes and some sort of greens. That said, we don't eat these meals often even in cold weather; but the only time I do serve them is in colder weather. I still try to keep most our meals light and summer like in general, as we just feel better eating lighter.
I never used to like salisbury steak but there was something about Ree's recipe that got me and so I tried it. Hers is probably the only one that I will ever eat or make, but if like me, you are not a fan of salisbury steak, you might want to give her recipe a try if you are tired of eating the same thing over and over. It is easy and economical and smells (and tastes) wonderful.

I do a lot of one pot meals during the Winter, it's easy and hearty and we always have left overs.

@PA Mom-mom wrote:@ECBG I like sausage with broccoli rabe and whole wheat pasta. I especially like it when our local supermarket makes their store-made sausage with provolone and broccoli rabe! But any sausage works. You could also use kale if the broccoli rabe is too expensive. The original recipe calls for orcchiette, but I think this stands up to whole wheat pasta.
@PA Mom-mom Funny you mentioned this I made it tonight.

Chicken and biscuits, chili, beef stew, roast beef with gravy and mashed potatoes/hot RB sandwich.
Soups, homemade veggie beef, potato, potato and corn chowder, broccoli cheddar etc.
Don't eat any of the above every day of course.

The noodle casserole sounds like something I need to try.
