Spagetti and chili aside, everyone's go to's will probably be number 1's.
I have a layered ground beef, egg noodle, sour cream casserole that is unreal! Reheats like fresh. We love, love that one!
I love homemade vegetable beef soup when I have the time to make it. I was never fond of the ground beef version.
I love stew beef with veggies cooked all day in the crock pot.
Noodle Bake
1 ½ lbs. high quality ground beef
1 ½ tsp garlic
2 14.5 oz cans tomato sauce
1 pkg medium egg noodles
1 Tbsp butter, plus 2 Tbsp.
1 16 oz sour cream
1 lg softened cream cheese
Optional: 2 Tbsp. chives
In large skillet, brown and well drain ground beef.
Add tomato sauce, and garlic and simmer about 20 minutes .
Butter 3 qt casserole and place a side.
In bowl, mix sour cream and softened cream cheese.
(I use my hand mixer).
Hand stir chives in.
Cook egg noodles aldente with oil in the water to prevent clumping.
Drain and toss lightly with 2 tbsp butter.
In buttered 3 qt casserole layer:
1/2 of the noodles
1/2 of the cheese mixture
1/2 of the meat mixture.
Repeat layers in same order.
Sprinkle with cheddar cheese.
Bake at 350 degrees for about 45 min. Cheese may be covered to prevent browning.
May be made a day ahead, refrigerated and cooked for 1 hour.

@ECBG Everything you mentioned sounds great. I almost never eat canned soup--I use it for cooking, but like homemade soup. Your casserole sounds terrific.

Chicken pot pie. Home made! Chicken and dumplings.
Roast beef with carrots and potatoes. Sausage and biscuits.

Pork roast with sauerkraut and mashed potatoes. Do the roast and sauerkraut in slow cooker.
Stewed chicken and the big, fluffy dumplings done in pressure cooker.
Beef stew also with dumplings.

@ECBG I like sausage with broccoli rabe and whole wheat pasta. I especially like it when our local supermarket makes their store-made sausage with provolone and broccoli rabe! But any sausage works. You could also use kale if the broccoli rabe is too expensive. The original recipe calls for orcchiette, but I think this stands up to whole wheat pasta.

@PA Mom-mom Exactly what I am making this week! I have a Shop Rite from home delivery coming tomorrow and their sausage with provolone and broccoli rabe was on sale this week, so it is part of my order. I also love the whole wheat pasta.
