Make your own crust using LARD, yes it's still sold.

 

 

Read a lot of recipes, I found the recipe that is from Americas's Test Kitchens the best, you actually cook the peaches first then drain and add just some of the juice mixed with pectin.

 

That was a perfect peach pie.

That's also the reason we boil the excess juices down to a syrup."

This is my favorite peach pie recipe passed down from my mom:

 

2 1/2 Tablespoons tapioca

3/4 cup sugar

1/4 teaspoon salt

4 cups sliced peaches

1 Tablespoon lemon juice

 

Mix all of above and let stand 5 minutes. Spoon into unbaked pie shell. Sprinkle with topping:

 

1/3 cup brown sugar

1/4 cup flour

1/2 teaspoon cinnamon 

2 1/2 Tablespoons butter

 

(mix topping ingredients with fork until crumbly before sprinkling on top of pie filling)

 

Bake for 45-50 minutes at 425 degrees.
