Most of the time I don't know what to fix myself for lunch if I'm home.  I pre-plan dinners, but get stuck on lunch.

 

I just had leftover dal and toast, delicious but I don't usually have Indian food hanging around the house.

 

I like a scrambled egg or fried egg sandwich.

 

I love getting those little smoked salmon squares from Costco and making a sandwich with them.

 

I also love Costco rotisserie chicken sliced for a sandwich, sometimes with a little cranberry sauce added.

 

Also tuna salad I make, or fresh medium size shrimp with celery and green onions in a little lite mayo.

 

I use the Sara Lee 45 calorie bread and often have grapes or half an apple with it.

 

I don't like spending time fixing something for myself.  I'm in a lunch rut.  What does everyone else fix?

I had a salad today from Jason's deli.  It had all kinds of fresh veggies in it.  I used balsamic vinegar and a small amount of olive oil for dressing.  I don't eat any prepared foods.

@winamac1 What do you mean by prepared food?  Like a deli sandwich or something you buy from the store?

Simple solution...sleep until noon then have brunch which is a cup of coffee and junk food like a muffin or toast.

This week for lunch I had costco mac and cheese.  It comes in the prepared food section in a family size container.  I put it in six lock and lock containers and put them in the freezer.  I put one in the fridge the night before and take it to work.

Lunch in this house tends to be cottage cheese with veggies or cottage cheese with fruits or sometimes a yogurt  (I like plain yogurt mixed with applesauce, liberally sprinkled with cinnamon..  Treat days give me an ounce of cheddar cheese or brie on a few crackers or if I'm looking for sweet -  a tablespoon of peanut butter and a bit of jelly on toast.

That's a really good idea.  I used to get the Costco Aram sandwiches and live off of those for lunches the same way.

@Noel7  It works well on nights I don't feel like making lunch. When I eat lunch at home, I cook Trader Joe salmon croquettes.  They are in the freezer section.  You get four in a pack.  I put one on a roll.  They aren't very big, but they are enough.  I don't live close to TJ, but will get to go soon and stock up.
