A friend went to a dollar store the other day and discovered 12 ounce cans of white meat chicken in water ..... for a dollar! Expiration date: early 2016.

She bought one to try it and it's fabulous ..... so she went back and bought 8 cans and gave me three!

So ..... what would make a good chicken salad with 12 ounces of white canned chicken ?

celery, fresh tarragon, roasted red peppers, not too much mayo.

mayo.....hellmanns or dukes only

cubed potato

chopped dill pickles ( i also use some of the pickle juice for extra flavor)

chopped hard boiled eggs

peas (canned or slightly al dente cooked frozen peas)

salt, pepper

some chopped spring onion and parsley (optional)

a few squeezes of lime or lemon

Hellman' s,salt n pepper,dried Cranberries and slivers of Granny Smith Apples.This is my hubby' s fav for chicken salad.(some folks put walnuts too....but we have walnut allergy in our house). :-)

My ingredients are similar to Sunshine's although I normally use sweet pickle relish instead of dill pickles. I don't follow a recipe, instead just toss in whatever I have on hand until it tastes good. Sometimes I leave out the hard boiled egg and potatoes, but always use some mayo or Miracle Whip and lemon juice, celery for crunch, and some kind of onion or shallot. I must say that I have never used canned chicken for my salad, not that I'm opposed to it, but have always used baked chicken breasts or leftover chicken from other recipes I've made.

Could you share what brand chicken it was that your friend purchased?

Shredded Chicken Breast, Hellman's Mayo, sweet pickle cubes, diced celery, salt, pepper and a dash of onion powder.

Tinkrbl, go to the website of the company and make sure that the chicken wasn't recalled. They are in the dollar stores for a reason. Most likely, it was a printing error on the label.

When I make chicken salad, my family knows they are guinea pigs!

I add pesto, mashed roasted garlic or anchovy paste to the mayo

I add different pastas

I season the veggies with: different salts, fish sauce, herbs

The veggies: different bell peppers, celery, onions or shallots, garlic

Is there any other type of mayo?

Actually, DH bought mayo for $1. It was called Bellman's. I tossed it.
