My experience with onions, including Vidalias, leads me to only buy a limited amount in netted bags at the grocery store. Haven't found an ideal way to store them in bulk or large quantities.
I do chop up and freeze some to add to recipes. Some fresh ones, I will wrap in paper towels and store in fridge in airtight container. Usually keep a few out in the kitchen in a ventilated basket.
Too many bought at one time leads to them looking not so great if kept for a long time.
I know storing them in a cool dry place is supposed to be good. My garage is either freezing in winter or mega-hot in other months.
I vote for buying a bag of six onions or so at the grocery store.
And yes, Vidalia onions are better than other onions--sweetly mild, don't make eyes water when chopping them. We love them and use them or another type of sweet yellow onion in some way at least a couple times a week when Vidalias aren't available.

I used to buy 20 lbs at a time, but, cut down to 10 lb. I get some at Sam's that are ok and supplement my stash with Sam's LOL
I put the whole 10lbs in the crisper that has the humidity control
I keep from 1 yr to the next when they sprout tops I just cut off the
green and pare off the outer onion still tastes better then those acid busters at the stores and restaurants.
Believe me "sweet Tx onions" are a joke ! they will put hair on your chest. Ga. for me............

@KingstonsMom - I'm in north Georgia. After seeing your post, I was at my Publix yeaterday and asked about the vidalias and they said it would be a couple of more weeks yet till they come in.

I don't know where to get Vidalia onions, but for that matter, I'd love to try Maui onions, and don't know how to get them either. Anyone know? Can they be ordered by mail?

Not a hater here. Honestly, I don't know the difference between vidalia onions and ... regular onions.
Anyone care to share what makes them special?

@SharkE : My onions came from Morris Farms this past week-end. I was a little disappointed that I did not get a notice that they had shipped since I was out of town over the weekend so they sat outside for 4 days ![]()

won't hurt the onions. Just glad nobody stole them. LOL
Vidalia's have less acid, keep longer. May not be the best way , but, just keep mine in the refrig crisper and they keep till the next yr. They may sprout that green stem, but , just cut off any bad spots. Half a vidalia is better then a store bought local onion. LOL
To each his own, I got to have onion on my burger , in sloppy joe's, meatloaf, etc. I soak one in bowl of water for a hr. dry it off, then chop if I want it less acid-y.
when they first started selling Vialia's you could eat like an apple, but, i guess the soil has changed where they raise them in Ga. because they got just a little more hot, but, not as hot as those belly burners that you find in the stores.
Shulman Farms sells a good 5lb bag of onions I buy at United to supplement the ones I pay more for. Shulman's sells 5 lb bags too then again just soak 'em till you get 'em where you like.
