I stuff mine then cover the top of the stuffing with foil; roast upside down on a rack in the bottom of the roaster. I add 1/2 tsp of rosemary and thyme and 1 tsp parsley to a stick of melted margarine or butter. Midway thru the cooking I add about 1/2 cup of chicken broth to bottom of pan. I use a conventional roasting pan with a lid. The cover doesn't have to fit tightly.

Marlocat, I also buy the Jenny O turkey breast in a bag! Target has them at a good price each year. I also buy a smoked leg or two from the grocery store because my grown son loves those.

We always make turkey breast on the grill, smoker or Nesco. I always put lots of butter under the skin, rub it down with olive oil & use some Herbes de Provence or other poultry seasoning. If you are making it in the oven use a roasting pan with rack. Insert a good thermometer so you can keep an eye on the temp. If the turkey is not finished cooking & has browned enough you can loosely cover with foil. Remove at 165° let it rest & it will finish cooking.

nunu4u...I'll have to check-out Target for prices...I usually buy at the local supermarket...The Smoked Turkey sounds Yummy! Thanks for the Info & Have a Great Thanksgiving!

I butter under the skin and set the breast on a pan of stuffing. Cover with foil until the last hour of cooking.

I always cook a Butterball Turkey Breast, skin side up, and I like cooking in a roasting bag, but if note, just rub some butter on the outside of the breast, and it usually browns on its on, that is why I like a Butterball!
ETA: Use a roasting rack in your pan!

I agree, this sounds delicious, please let us know how it turns out. I plan on doing it for Christmas, plus a ham. A whole turkey would be too much food.

We make 2 turkey breasts for Thanksgiving every year. We buy Costco's Kirkland turkey breast. It is fully cooked and sealed in plastic. You just place it in a roasting pan with 1/4 cup water and cover and bake. I add spices on top but it is not necessary. It makes the most delicious, moist turkey I have ever eaten. There is no skin, no filler, no waste and it is very inexpensive. I used to make a breast with the bone but there was so much waste and it was hard to slice. This is solid delicious meat and a hit with our entire family.
