This weeks "pandemic bakery" treats

Although we are open and things are returning to a "new" normal I'm still baking as everyone has enjoyed them!!

First selection: Lemon cupcakes filled with blueberry compote, swirled blueberry buttercream icing w/lemon crumbs

(Made for my friends birthday to take home)

2nd selection: Whoppie Pies with marshmallow buttercream icing inside (oh the filling is so yummy😋😋)

Too humid here to make macaroons although I do make really good ones. I've tried many times but no matter what I do -- they never "dry" enough and are chewy🤔☹️.

Sorry I can give you invite for napoleons or cream puffs🙂

All your treats look amazing and delicious! I haven't seen whoopie pies in many years. Going to start baking with my daughter today. Making Reese's Chocolate Peanut Butter Cookies. Then I'm going to have her pick out a new recipe once a week.
