Alrighty @homedecor1, been waiting for somebody to ask for the recipe for your whoopie pies and yummy filling, so I guess it's me asking, lol! I have an old whoopie pie recipe, but never liked the filling.TIA!!!

Super easy!!!

 

1 box chocolate cake mix

1 small chocolate instant pudding

3 eggs (large)

1/2 c. vegetable oil (no substitutions)

3/4 c. water

 

Heat oven to 350 degrees

 

Mix all ingredients until smooth. Batter will be thicker.

 

Set aside.

 

Line cookie sheets with parchment paper - spray lightly with Pam.

 

Scoop batter using 1" cookie scoop.  Drop onto trays.

 

Bake 10-12 minutes.  (my oven took 12 minutes)

FILLING:

 

2 sticks butter (not margarine) softened

2.5 c. confectioners sugar

1 tsp vanilla 

1 7-7.5 oz jar of marshmallow fluff (I use Kraft Jet Puff)

 

Cream butter well, add conf sugar (slowly) until well combined & smooth, scrape bowl.  Add vanilla and jar of marshmallow creme.

 

Mix until smooth - i tasted it to make sure right sweetness.  I added a little extra 10x sugar - 

 

Once smooth - I placed in pastry bag with star tip and piped onto sandwiches.  Rolled edges in sprinkles.

EDITED:  FYI:  I guess you could use a canned icing any flavor BUT I don't like the taste canned icing

At least someone is ...I think my spouse has just about had it with the "pandemic bakery" working all hours of the night when he's trying to sleep!!!

 

And he is YET to have anything I baked ... prefers yucky Entenmanns donuts ... go figure!  LOL

I just had a thought -- make cupcakes & fill with the creme.  Would need to fill from top but still would be enough center.

 

Then ice with a ganache glaze...would be like a hostess cupcake I loved as a kid 🙂🙂🙂🙂

@homedecor1  My mother in law used to say if you can read you can bake...I disproved this  theory several times lol  I'm a great cook but you have inspired me to try to bake again!

@homedecor1 what a great idea to make filled cupcakes! I bought the "fluff" today, so all set to try this recipe. Love me some chocolate, but DH can live forever w/o any...strange, I know, lol!
