Beautiful! @homedecor1  Where did you find your pan. I have a pan for smaller bundt cakes but they are too large for one person . This looks perfect.

Its a wilton pan Excel Mini Bundt pan.  I purchased many years ago.  The trick to heavily spray with Pam (I use Baking pam spray) & fill only 2/3 or to the "brim line" on pan. 

 

They come out mini size.  The pan is available at Amazon by searching Wilton Mini Bundt pan.

@homedecor1   wow. Beautiful.  I want one too!  I have just no idea how I did not gain through this pandemic.  Right now I’m about 4 lbs lighter than March 1.  So room for one mini!!  Thank you again for sharing your lovely weekly treats. I know they will miss them!

oh sorry didn't know you "really" wanted it😉

 

Its so easy ....

 

Bundt cakes:  Spray pan all areas with Pam / Bake 350 about 10 min.

 

1 box devils food cake mix (Duncan Hines) - mix as directed

1 can cherry pie filling 

2 c. heavy whipping cream  (or small tub cool whip)

 

Chocolate ganache:

1 c. heavy whipping cream

1 c. semi- sweet choc chips 

(equal parts if you need more)

 

Directions:

 

Mix cake mix as directed.  

I put cake mix in pastry bag - clipped tip easier to control amount

   to fill bundt pan.

Fill about 2/3rds each cake - there is a "rim" do not fill above it or they will overflow together.

**** you get about 14-15 out of 1 cake mix*****

 

Bake 350 for 10 minutes -- use tester for doneness

 

Remove from oven allow to cool about 10 minutes. Carefully turn out onto cooling rack lined with wax or parchment paper.  Then turn right side up -- trim any excess cake around edges.

 

(I made 3 pans used 2 cake mixes - made 36)

 

Once completely cooled :

 

  1. fill each opening with a few cherries, I tried not to put any gel.  

    2.  Make ganache : warm heavy cream in saucepan + add choc chips till smooth & silky.  Allow to cool about 5 minutes or until cool enough to pour.

 

   3.  Using cooling rack over sheet pan place cakes on rack and pour ganache over them.  Wait about 10 minutes and refrigerate til hardened.  (I did over night).

Whipped Cream Swirl

 

Whip cream w/1/2 c. conf sugar until whipped (do not over beat will turn to butter😳) -- you can use cool whip get same result.

 

Add some cherry gel from filling into whipped cream.

 

Use star tip and fill pastry bag with whipped cream.  Swirl on top of each cake.

 

I'll warn ya they are "chocolaty" and rich...everyone loved them!
