What is the green leafy stuff used to dress the meat market cases and in packages of meat? Is it edible?

Most of the time the butchers use parsley but I haven't seen that in years, even in the upscale grocers in the area.
If you are thinking that heavy green leafy vegetable, sometimes kale.

I've seen parsley used which is edible.

Kale is usually used as a garnish in raw meat displays. It is edible, but I wouldn't want to eat it after it was touching all that raw meat.

Reason I asked: my goofy husband said he had a burger that had "green stuff" on it rather than lettuce. Me: what kind of green stuff.
Him: that green stuff that we see decorating the meat case!

I'm not actually sure why retailers need to "dress-up" meat with greenery. It makes the meat more atttractive???

It was probably some sort of leaf lettuce. I never saw a cooked burger with kale on it.
