My son was vegetarian for many years--he ate eggs and dairy--now he is pescatarian--he eats seafood as well, so feeding him is easier now, but I have a recipe for stuffed shell pasta that is amazing that he couldnt get enough of. I fixed salads and lots of veggies and bread stuffing and spuds too. Now I can go crazy with the seafood dishes, just have to sub the meat broths and such to veggie broths. Rice dishes are good too, but you may to sub a few things----also watch out for the butter--there are vegan kinds that are good but pricey--the impossible meats are pretty good too. And portabello muchrooms are really meaty when cooked. Lots of great recipes for those.

I think a vegetable lasagna is an excellent idea! If they are vegetarian it is easier than serving a vegan.
My DD's fiance is vegan and when they come over they bring a tofu turkey....looks good but I've never really tried one.
ETA: You know, If you offer a variety of vegetables, potatoes or sweet potatoes, they won't go hungry. I know you're trying to be a good host but the bottom line is they realize it's Thanksgiving and most people serve turkey as the main dish...they will not go hungry if you have plenty of side veggies....then there is more room for dessert!

Being a vegan, even I can appreciate your thoughtfulness. Most vegetarians and vegans that I know wouldn't want to create extra work for you. Thanksgiving is already stressful and hectic, adding additional work just isn't necessary. When I go to a family for Friendsgiving, I typically just have the abundant side dishes that are available for everyone. I do love the idea of the vegetarian lasagna but don't think you need to go through the extra work.

As a vegetarian, I'd *not* want to eat a pasta dish along side the heavy dishes typically served in a thanksgiving meal.
Usually I just load up on the sides with a larger veg/salad helping.
Sides that can be prepared vegeterian or vegan:
Mashed Potatoes
Sweet Potatoes
Stuffing (outside the bird)
Cranberry Sauce
Green Salad
Green Beans/Green Bean Casserole
Roasted Vegs
Rolls/Bread
Rice Dishes
If you are doing most of the cooking what would be appreciated & less work than a whole other dish, would be to be considerate to make things easily vg/vegan. For example:
-Leave out the bacon
-Use veg broths instead of turkey juices
-Dont pre-butter the rolls, or use margerine instead
-Cream of mushroom instead of cream of chicken bases
-Dont pre-dress the salad
Things like that to adapt and to be considerate of all who will be enjoying the cooking
