I can't get the pole green beans, but I can get farm fresh that are thin and have few strings.

 

I had a big bag of green beans which DH and I got ready tonight to cook tomorrow.   The ends needed to be broken off and then broken.

I way out "broke" DH!  He was way behind when I checked!!!!!

Fresh green beans are a staple at "dinners" on southern tables.  I never use "salted pork or fat back" as they used to when I was a child.

 

Green beans are good and a wonderful vegetable that isn't a carb.

I'm having potato salad, so a tossed or other salad wouldn't be appropriate.😁

@ECBG Sounds wonderful ... me being in northern Washington State we don't do anything like that.  I remember holidays w//my mom & grand mom & I'm sure they had their own special dishes but never shared w/me or my sister - I'm envious.

I'm so sorry.   I made my own life.  We may have both been surrounded by dysfunction, but many are and they manage to learn and grow.

 

You are more than welcome to come and have Easter dinner with me.

 

If you would like me to help you cook something,  please let me know.  When I taught I ran 5 kitchens at a time.  My favorite classes were the creative ones, however.   I wrote Interior Design curriculum.   Then became a stylist after I retired.

@ECBG Please don't be sorry - I didn't mean that.  I was just so struck w/you doing the green beans which I just wasn't aware of - I love that I now know something more & I've always been so appreciative of your knowledge - it is appreciated.  And, something so different but the Zags won - so yeah, a good night.

My parents are from the south.  It was my job to "snap" beans........

With the "fresh" string beans in a large bowl, you go sit out on the front or back porch of your house.

You pull the pointy end down all the way to the other end.  You're pulling the "string" (spine) off of the bean. 

Afterward, you snap the bean in half & remove the bean eggs (it's what I called them).  They are actually "seeds."  Some folks leave the seeds inside.  I didn't.  If my mother snapped beans, she left them inside.

You throw the snapped string beans into another bowl.  Trash the bean eggs, the string & pointy ends into the trash or throw them on the ground for any "2 or 4 legged strays" to eat. Smiley Tongue

I just cut the ratty ends off.

If you don't string them, when you eat them the "string" is tougher than the rest of the bean, so it doesn't disentigrate in your mouth the same. It'll feel like you have string in your mouth.

@Mz iMac   I'm from the South (NC) and still live in the South (NC), but I've never heard of throwing the beans away.  In fact, I love the beans in pole beans.  When cooking them, the beans come out of the pod and mix in.  They're the best.
