I'm always looking for new kitchen toys, and my daughter promised to lend me her sous vide machine to play with. Anybody here love it? What do you make that's wonderful?

We use ours mainly for beef.  My husband and I like our steaks rare to medium rare.  It makes the perfect filet.  I set it for 126 degrees and leave it go for one hour.  Take the filets out and sear them in a hot pan and they are ready.

 

Over the weekend I made a 5 lb. prime rib.  I started it early -- about 12 Noon and we didn't eat until around 6PM.  I then put it under the broiler and it was wonderful.

 

The beauty of the sous vide is you cannot overcook your item.  It will hold it at the perfect internal temperature for quite a while. 

 

We did make a pastrami and that took a day and a half and that too was delicious. 

 

Definitely give it a try.  There are lots of recipes online.  Enjoy!  And please let us know what you think of it.
