Has anyone used this tool before? What brand/model? I don't really understand the purpose or if my DH would use it enough to warrant the purchase.

Look up "Modernist Cooking" and you will find out more about it.

A poster here once had a thread called something to the effect of "How to cook like a rock star"-I was intrigued, researched it and bought a device.

The premise is, for any number of things, the food is cooked at a low temperature in a water bath (it is placed in a water tight bag in which all air has been displaced-and that could be anything from a zip lock to a Food Saver.)

You program some models from your Smart phone-this is not an instant meal.

After cooking meats, you do need to brown them-either putting them under a broiler or using a blow torch.....

Believe it or not, this is nothing new. Classical trained chefs such as Curtis Stone were taught how to use this-and five star restaurants use it.

All this being said, I tried three times and was disappointed-especially with meat.

I am not a professional chef either....

On a positive note, there was a transient poster by the name of @Swissguy who was in love with an egg dish made the sous vide way.

I don't know that it as easy to use-it does take thought and time.
