I made butternut squash soup this AM. , it was a pita to prep , but the results were worth it. What's cooking at your home today ??😋

I made Pumpkin bread, kale chips, and my first ever red lentil pasta with tomato sauce for lunch. 

 

It was really good!  I can not tell you how excited I am to have pasta back in my life.  It's literally made from red lentils only and I throw on a homemade tomato sauce.  Found it in the supermarket last night and figured I'd try it.  Two thumbs up from this Italian.

Oh goodness @QVCkitty1 your pita comment made me laugh out loud as the first time I "tackled" a butternut squash I was quite sure it was going to end up being a fight to the death but I finally peeled/chopped it into submission.  I am ashamed to say that if I can find it (on sale) prepped in the store I will grab a bag as I love me some butternut squash.

 

As for what's cooking, I finished the last of my beef short ribs I made in the IP (delish) and just froze the remaining broth for future culinary adventures.

I have several very ripe bananas so if I can muster the energy, I going to make that banana bread recipe using a cake mix, that someone posted here.  I had a busy morning, didnt sleep last night so a nap is looking good right now.

Oh @Sooner I truly love where I have moved as the shopping is so much better but for some reason Jersey Mike's haven't had the forethought to plunk a store by me as I alone could keep them in business.  So good, love their sandwiches!

Oh @Kachina624 my friend I feel you about the not sleeping.  It's become very warm and muggy in the CHI suburbs which means no sleep for mtc.  Two more days and cooler air is due, hope your banana bread recipe is a hit!

I just had a bowl of left over cabbage roll soup for a late breakfast.  I'll be so glad when it's gone.  Should have froze some of it.

 

Butternut squash soup sounds really good.  I know it's a pain to cut up, glad Costco now sells it that way this time of year.  I have a recipe somewhere . . . I think it call for some sour cream to make it extra fattening.  LOL
