It's my decades old, tried and true banana bread recipe:

 

1/3 cup milk

3 tbs. veg oil

1 egg

3 very ripe mashed bananas

1/2 c granulated sugar

1/2 c brown sugar

2 1/2 c flour

1 tsp salt

2 1/2 tsp baking powder

 

The mini-bundts bake at 350° for about 30 min.  I spray the pans with cooking spray, then shake a liberal amount of cinnamon sugar into them before adding the batter - it makes a nice, crispy top when they are turned out.

We enjoy the mini-bundts because they are easier to share with neighbors or coworkers, that way we don't have to eat the entire thing ourselves, or watch it get stale.  I especially like it for banana bread, which tends to get dense and mushy in a large pan.  Spice cake sure sounds good, too!

It wasn't very hard to do - I'm sitting out on my back deck, but I know the recipe by heart.  I've made it countless times over the years and it's one of the best I've ever had.

@house_catthanks for the recipe, I would never have thought of the cinnamon&sugar idea in the bundt pans. I just got some Vietnamese cinnamon from Penzeys last week.
