Roasted Shrimp Cocktail

 

Ingredients

 

For the shrimp:

 

2 pounds (12 to 15-count) shrimp

1 tablespoon good olive oil

1/2 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

 

For the sauce:

 

1/2 cup chili sauce (recommended: Heinz)

1/2 cup ketchup

3 tablespoons prepared horseradish

2 teaspoons freshly squeezed lemon juice

1/2 teaspoon Worcestershire sauce

1/4 teaspoon hot sauce (recommended: Tabasco)

Directions
  1. Preheat the oven to 400 degrees F.
  2. Peel and devein the shrimp, leaving the tails on. Place them on a sheet pan with the olive oil, salt, and pepper and spread them in 1 layer. Roast for 8 to10 minutes, just until pink and firm and cooked through. Set aside to cool.
  3. For the sauce, combine the chili sauce, ketchup, horseradish, lemon juice, Worcestershire sauce, and hot sauce. Serve as a dip with the shrimp.

Hot Shrimp Scampi, Hot Shrimp Po'Boy, garlic grilled shrimp is my absolute favorite!!!!!!!! I Just love Shrimp!

I do like shrimp a lot but I have to make sure it's not from Southeast Asia, as those seem to make my throat itch.

 

I like a shrimp cocktail, so that's a good choice for me for eating it cold.

 

I have this shrimp and orzo recipe that I got from Cooking Light a hundred years ago that I really love.  It's easy, too, as you just toss everything in one of those cooking bags, near as I can recall.  I haven't made it in ages, though, and keep thinking I need to do that again.  So, I guess that's my fav recipe for eating it hot.

I love shrimp no matter how it's cooked, but shrimp scampi (aka shrimp in garlic & butter sauce) and shrimp cocktail are favorites.

 

At Costco recently, I bought another  2-lb. box of frozen SeaPak Garlic Butter Shrimp  Our first purchase was so good that I couldn't resist it this time.  Hope Costco keeps carrying that product.

 

The shrimp are easy to spread out on a  sheet pan, bake  and serve with or over rice.

Thanks for the recommendation.  I’m going to Costco today.  I’ll have to check it out, to see if we can eat it. 

 

Update:  I checked out the ingredients this afternoon and unfortunately I had to pass. 🙁

I am not a fan of any seafood; husband can take it or leave it.  

 

My daughters cook seafood meals for their boyfriends, at the boyfriends houses, not here!

I'm all in for the shrimp and grits as long as it isn't too spicy. I'm a big fan of grits, but NOT Instant grits.   My Daddy wouldn't eat grits.  Said he'd never had grits until he went in the Army where they got them every day.  "Feed them Southern boys grits.  Them Southern boys love grits."  Well, not that Southern boy I guess.

 

I hate cocktail sauce.  So, I guess it's hot shrimp for me in most forms.

@ECBG  When we arrive for our week in Sanibel, the first thing we do is get 4 or 5 pounds of wild caught shrimp. We steam in-shell in lots of Old Bay. Then we eat some hot. After that, we eat them cold for lunch the rest of the week until they are gone. Use a good cocktail sauce (Kelchner's if we can get it.). We'll take shrimp any way we can get them! 

Also, @Sooner  and @Sage04  I'm fixing to make Churchill Downs Shrimp and Cheddar Grits for the Derby.

i enjoy cocktail sauce, but i prefer dipping my old bay steamed shrimp into a cajun mustard sauce........mayo, grainy mustard, and horseradish......so yummy on shrimp!

 

i also love dipping shrimp into a thai chili sauce......spicy and sweet.

I'll eat shrimp any way that it's cooked....but, I love cold boiled shrimp with a little cocktail sauce!
