Pasta salad
Or...I make a dish of green peppers, red bell peppers, onions, garlic and boiled red potatoes. I keep boiled red potatoes on hand. I peel them and fry all of the above with Italian seasoning, a little crushed red pepper and a little olive oil. It takes about 20 minutes to get them to the consistency a like.
Since it's Superbowl and you might not want to be tied to the stove, I have also done this by baking them in the oven with some tin foil on them for about 45 minutes and then remove the foil and continue for another 15 minutes or until you get them to the desired softness.
I often make this with Italian sausage, especially when I have a lot of people. I also thrown in some chicken legs that I season. A one roaster meal for a crowd.

I have served fries on the side when I have made Italian beef sandwiches, but I like Gooday's idea of roasted potatoes, too. That sounds yummy!

I was also going to say fries. I make them more like steak fries, roasted with olive oil and kosher salt.
