I want to bake a red velvet sheet cake.  Do I have to use a sheet pan or can I bake it it my pyrex glass baking dish?

@Imaoldhippie - I guess it depends on your desired results. You can certainly bake a red velvet cake recipe in a glass dish rather than a metal sheet pan, but the volume of each pan is likely to be different, so you'll probably have to adjust your batter amount and baking time—and you'll get a longer, flatter, true "sheet cake" on a sheet pan versus a taller, narrower cake in a glass dish.

The pan for a sheet cake is generally larger than a 9 x 13 pan, it is similar to a cookie sheet in size

Most cookbooks say to reduce the oven temperature of a recipe by 25 degrees if using glass. Glass bakes faster than metal. 

 

That's been my experience. I do use glass occasionally, and always set the oven a bit cooler.

I have baked many sheet cakes in 9 x 13 glass pans with no problem.  As someone said, lower the temp. 25 degrees.  They may cook a few minutes more or less than in a conventional metal 9 x 13 pan,  but just test by the toothpick method or pressing lightly on the top of the cake to make sure it is solid.  

 

You should have no problems.  It's done all the time.
