I always thought a chef's knife was IT!   If I could learn to use one, I'd be a better cook but I found something much better.

 

It's a Japanese/Chinese style knife, it looks like a cleaver but not as heavy.   The blade is thin and much safer to use because it fully protects your opposite hand.
