can cook from frozen

We usually buy a few when they are on sale this time of year and freeze,

last year, was the first time i froze corned beef. The price is right, right now and such a nice change of pace, from the summer burgers and hot dogs. Pressure cooker is the way to go.

Re: ST PATRICK'S DAY -CORNED BEEF-HOW TO

@Flatbush

Years ago, I believe it was @Mothertrucker  posted the absolute BEST way to make CB, baked in the oven...and I have never gone back to crock etc.

3 yrs ago, we had a CB contest.....Boiled, Crock Pot, Smoked and Baked as per the below recipe.

EVERY single person voted for this baked.  My DH tried hard to sway votes to Smoker...but none of my guests would budge.

Here is her recipe, it has been shared many times on the boards.

I even started making the glaze and everyone loves it as well.

I do veggies/starch on their own.

CORNED BEEF ROASTED IN OVEN W/ APRICOT JAM GLAZE

the best way, hands down, to cook corned beef...

Drain it, throw out the packet..

Wrap the meat in heavy duty foil, place on baking sheet .place in 275 degree oven..

bake 1 1/2 to 1 3/4 hr per pound..

if you like, when it is done,

glaze with a mix of apricot jam, horseradish and mustard

and broil for a few minutes..

it will be the most tender and least shrunken corned beef EVER..

We have done this for 40 years, and swear by it...

Re: ST PATRICK'S DAY -CORNED BEEF-HOW TO

I never thought I'd like it so I've avoided it all these years.  I finally made my first corned beef last year, following the package instructions to simmer for a about 3 hours.  It was good, but I had nothing to compare it to.  This year, I'm thinking about trying it in the oven. The instructions I read said to rinse and blanch the meat first, then put it in a baking dish, on a rack, with the package seasonings and a little water in the pan, and bake at 350*  (time depends on the size).  Adding veggies to the pan is optional

Since we don't eat potatoes or carrots, I'm making mashed cauliflower and steamed baby cabbages (Brussels sprouts) to accompany the corned beef.

Re: ST PATRICK'S DAY -CORNED BEEF-HOW TO

I cook a brisket low and slow all day in the oven:

4 lb beef brisket, rinsed

4 cups chicken broth

4 cups water

3 carrots, chopped

2 ribs celery, chopped

1 onion, quartered

3 bay leaves

1 tbsp peppercorns

1 tsp dried thyme leaves

1 tsp whole allspice

Cook everything in covered Dutch oven in 300 degrees oven until meat is fork-tender, 4 1/2 to 5 hours.  Strain cooking liquid into big bowl and skim off fat.  Pour 1 cup of defatted liquid back over meat in pot and cover for 1/2 hour.

If you cook the vegetables separately (potatoes, cabbage, and whatever else you add)....be sure and scoop some "cornbeef WATER" out of the crockpot to use for the vegetable liquid.    You don't have to wait til the meat is finished to do this....

Good advice, this is how I cook the vegetables.

Re: ST PATRICK'S DAY -CORNED BEEF-HOW TO

I LOVE corned beef!!! I cook mine in the crock pot for many hours then add the cabbage ,spuds, carrots when there is a couple hours left before the meat is done--that way the veggies aren't soggy but the cabbage gets that yummy flavor--but this year, since my loan for buying corned beef hasn't been approved yet Woman Wink--DD and I will make corned beef paninni sammies, and cole slaw. And maybe a beer for good luck!!!

2.99 per lb. for flat cut, here in MI. I think it's a good deal-no fat(well, just a little ribbon) or bones, just meat.

Re: ST PATRICK'S DAY -CORNED BEEF-HOW TO

I place the corned beef in a Dutch oven (Le Creuset or Lidge), add a bit of water or stick, add potatoes and carrots, and sprinkle with pickling spices.it cooks for 2-3 hours on 350.

Re: ST PATRICK'S DAY -CORNED BEEF-HOW TO

I used Mothertruckers oven recipe last year for my corned beef and it was excellent! Very easy, so tender and moist - perfect. This year I forgot about that recipe and made it in the crock pot along with the carrots and cabbage (at the end). The results? The corned beef was fine, but not nearly as moist as the oven method.

I'm going back to the oven method....plus I don't have to drag out my giant slow cooker! I'll cook the carrots, potatoes and cabbage separately in beef broth.

Glad you posted this great recipe again!
