Looking for a recipe for a spinach salad I had many years ago that I vaguely remember. It had mandarin oranges, red onions, mushrooms, and poppyseed dressing.   I think I am missing an ingredient.  Does anyone have a simialr recipe to share?

      I'm looking for a traditional spinach salad recipe too but you lost me at red onion, mushrooms and poppyseed dressing.   Smiley Wink     I hope you find it.

I'll look at anything that may resemle this.  Maybe I was dreaming.....  Nevertheless, it was a great salad!

Pinterest has several versions of poppyseed dressing.  I have eaten this salad and I think you have it down pat!

 

Was it plain poppyseed vinaigrette or creamy?   I think I remember plain and we did not add bacon.

Missing ingredient: Strawberries?

 

i used to work with someone who always made a good spinach salad to bring for work parties.  Never got the recipe

This one was from "Taste of Home"...although, it has a few more ingredients Smiley Happy

       

          1/4 cup sugar

  • 1/2 cup slivered almonds
  • 1 bunch romaine, torn
  • 1 package (6 ounces) fresh baby spinach
  • 1/2 pound sliced fresh mushrooms
  • 3 cups (12 ounces) shredded Swiss cheese
  • 1 medium red onion, sliced
  • 1/2 pound sliced bacon, cooked and crumbled
  • 1 can (15 ounces) mandarin oranges, drained
  • POPPY SEED DRESSING:
  • 1/3 cup white vinegar
  • 1/3 cup sugar
  • 1/4 cup finely chopped onion
  • 2 tablespoons Dijon mustard
  • 3/4 teaspoon salt
  • 3/4 cup canola oil
  • 2 teaspoons poppy seeds

 

 
 

Directions In a small heavy skillet, melt sugar over low heat. Add almonds and stir to coat. Cook and stir 3-5 minutes or until golden brown. Spread onto a greased sheet of foil; break apart if necessary. In a large bowl, combine the romaine, spinach, mushrooms, cheese, red onion, bacon and oranges. For dressing, in a blender, combine the vinegar, sugar, onion, mustard and salt; cover and process until blended. While processing, gradually add oil in a steady stream. Stir in poppy seeds. Pour dressing over salad and toss to coat. Sprinkle with sugared almonds. Serve immediately. Yield: 16 servings (1 cup each).

I believe I had used both types of dressings.  It had no bacon and I didn't think eggs.  I was wondering if it had slivered almonds or not!

I used to make it with chopped eggs, chopped bacon, sliced mushrooms.  Never used mandarin oranges fresh or canned.

Found this one for you -- I also saw one that had a can of water chestnuts instead of the strawberries.  Hope this helps.

 

SPINACH STRAWBERRY SALAD  

 

1 lb. spinach, cleaned, stems removed and torn into bite size pieces

2 Bibb lettuce, cleaned and torn into bite size pieces

1/4 lb. sliced mushrooms

1 can mandarin oranges, drained

1 med. red onion, cut in half rings

1 pt. strawberries, hulled and cut in fourths

 

Toss spinach, lettuce, mushrooms, and onion together. Scatter oranges and strawberries on top. Pour dressing over.

 

DRESSING:

 

1/2 c. sugar

1 tsp. poppy seeds

1/3 c. red wine vinegar

1 tsp. dry mustard

1/4 tsp. salt

1 tbsp. lemon juice

1 tsp. paprika

1/3 c. honey

1 c. salad oil

1 tsp. grated onion

 

Mix together in bowl sugar, mustard, paprika, poppy seed, and salt. Add honey, vinegar, lemon juice, and onion. Put into blender; on low speed, pour oil into mixture very slowly. Makes 2 cups.
