Run on pumpkin?

I couldn't find one can of that Libby's Pumpkin Pie mix Thurs. at the Walmart or the United. The one where all you add is one can of evap. milk and 2 eggs.

It's not Nov.-Dec. wonder why it's not on the shelves this time of yr.?

Another thing that has been scarce is cauliflower. I love it and the last two times I grocery shopped there was none to be found. I read recently that there was a shortage and I'm bummed.

There is, indeed, a shortage of pumpkin.  I remember seeing a report on the news around October that the pumpkin crop in Illinois, which produces about 90% of the pumpkin supply in the U.S, was wiped out by last summer's heavy rains.  Because the supply ran out, you probably won't find any pumpkin anywhere until the next harvest this coming fall.

I initially read the title as ruM on pumpkin and thought it sounded interesting.  LOL

Got those cans of that other kind out there. The flat no sugar or spice cans, which I guess you have to Dr. up yourself which is better then nothing.

I always liked the make up of the darker cans. Hard to gauge how much this and that you have to put in when you use 'raw' pumpkin.

I have never used the pie filling type.  I want to add my own ingredients.  That being said, I make it for others since I am NOT a pumpkin fan.

I always purchase the regular pumpkin puree, not the 'mix' ones but it probably applies to any of it that there seems to be a shortage every year for the past few years.

 

What I do is to buy a year's worth each fall, when it first comes out plentiful again.    I use it for the dog, as well as the occasional baking.

I have always used the plain Libby's pumkin and follow the recipe that is on the label. If you find some other brand of pumpkin, the Libby's recipe is online. It is very good.

 

I have never tried the "pie filling". I should do that sometime.

I bought several cans of pumpkin around Thanksgiving since they were talking about a shortage after the holidays.
