My mother was a fantastic cook and okra was one dish she made which I loved and still love today.  I have tried to duplicate it but don't have the "just a pinch of this, spoon of that LOL" expertise that she had.   I finally found a recipe from Paula Deen that is fabulous.   The recipe is okra with tomatoes and onions, somewhat of a stew.  I just had it tonight using fresh/frozen okra from the grocery store.

Here in PA,  fresh Okra is a difficult veggie to find.  I have bought frozen pieces before...for veggie soup.  I can't wait to try it.  I love  vegetables..my favorite food group.


@Carmie Honey, you can roast frozen too!  Just add a minute or two!!!Smiley Happy
