Hmmmm, I have a pork tenderloin in the freezer, and I think I'll follow your lead, but use sweet potatoes instead.

 

Already made my NYE and NYDay dinner, but will make this later this week. Smiley Wink

@qualitygal  Roast beast? Mmmm....sounds delicious. Sorry couldn't resist, made me chuckle. I know it's a typo. I made beef short ribs and mashed potatoes for dinner tonight. Comfort food!

@SaveTheTurtles   When we say "roast beast", it's from the Grinch movie.  My husband can't resist calling our roasts that.  LOL  Just a FYI.  But then, that's our sense of humor.

I think that terminology is hilarious - Can't wait to use it on DH, next time I make a Roast. Smiley LOL
