I suspect it has its beginning in something to eat when poor people had little but some hog fat and chickens.  That's what it sounds like to me.

 

Often when you had nothing else you had a speck of flour, something from a hog or chicken to make gravy and some eggs.  Pair that with a biscuit, rice or bread of some kind, dumplings or noodles and you have a meal.

 

I once heard an old old man in New Orleans say it was a great place to live because something free was always going on, and you could live until the end of the month if you had a little rice and gravy.

 

That will always stick with me. There's not having what you like to eat, and not having anything to eat.

I've seen hard boiled eggs added to several gravies on tv including Ree and Trisha Yearwood. It is a southern origin. I think it replicates giblets but why it is added other than tradition dont know.

I have seen hard-boiled eggs as one ingredient in southern cornbread stuffing.  Not something that I plan to add, but it may be delicious.  

The next time that I hear salt and ice together, it better be in a margarita!

I'm from WV and have never seen, nor eaten this.   

 

My family does not add eggs to our dressing.   

I am disgusted by fried eggs as toppers on burgers, etc.

@RedTop - when fried eggs became the in thing to add to burgers I never got it.  I decided to try it one night and oh my, it was the best burger I have had!

I am allergic to egg whites, but can handle eggs in cakes, meatloaf, etc.   Eggs and milk are 2 things I try to avoid.

My mom cooked boiled eggs in gravy (none of the other stuff in it), when I was growing up.  I fixed it for my kids.  I havent had it in years.  We are Ohio born and bred.

 

For those who said yuk, its very good.  Dont knock it til you have tried it.

I have seen her use boxed stock, I've seen her use canned beans, canned green chiles, things of that nature.  I wouldn't consider her to be a "semi-homemade" cook or a doctor it up kind of cook.
