I knew someone who put very finely chopped eggs on top of the giblet gravy.  

 

At least all of this "problem" is certainly the problem of folks who have enough of what they want to eat. . . and for that most of us here can be thankful this week.

It must be a southern thing. I'm from Mississippi and we HAVE to have gibklet gravy with chopped hard boiled eggs in it.

My mom made this exactly once a year on Thanksgiving for my Daddy.  He loved it but I thought it was the worst thing ever.

I am from Arkansas and do not recall my mother, grandmothers or great grandmother ever making a gravy with a hard boiled egg in it, nor does it sound good. While not a fan of hers at all, I have found a few recipes in one of her books that looked ok, but not enough to buy it and give her money.

My relatives in the South swear by the addition of chopped hardboiled eggs to many of their dishes that involve gravy, especially giblet gravy. It isn't as terrible as it may sound, but it's definitely pretty low on my list of things I like to eat. I love hardboiled eggs and gravy—just not together. (And I have to say that the Heinz jarred turkey gravy is not half bad! Homemade will always be better, but the jarred gravy is very handy, especially if you're not cooking a whole bird where you'll have good drippings.)
