I'm cooking chicken and red potatoes with spinach tonight. I'm not one that cooks often, but I wanted to try red potatoes (skin on) again. Usually they are too hard and I end up microwaving them. Anyone have any helpful hints/tips to make sure they turn out good? It is supposed to be a "special" dinner tonight for my husband. Then we are going for massages and a movie tomorrow. I would hate to start out with potatoes I can throw through the windows!
