This past weekend I purchased the Farberware Professional V-Blade Mandoline Slicer, thinking it would work to cut sweet potato fries, as it included a "thick julienne" blade. Got it at Walmart.
Well, it definitely is not the right thing and I am thinking of getting something that ONLY cuts fries and not other things like tomatoes, carrots, etc., so I know it will work for the only thing I am interested in.
I searched on the Internet, checked out Amazon, etc., and there seems to be an abundance of choices.
If you have a cutter that is designated for fries, and you are very pleased with it, I would appreciate knowing the brand and if it will do the size (thickness and length) of the typical fries you can buy when you go to a restaurant.

@World Traveler It only takes a few minutes to slice them to any thickness and length with a sharp knife. By the time I get a mandoline out, set the blade, slice, wash the mandoline, and put it back on the shelf, I could have cut and cooked the fries, as sweet potatoes don't take long at all to cook compared to regular potatoes.

A good sharp knife with a thin blade! I cut off a slice so the potato will set even and not roll. Easy to slice. I like to cut the round, then slice, about 3/8" thick.

@Zhills Actually, that is what I ended up doing and, of course, the fries were all different thicknesses, didn't look that great.
And, @mousiegirl, you are right...by the time I got the mandoline out, picked the correct blade, used the thing-a-ma-jiggy that holds the food in place, I just knew I would never use that again! ha!
Just want to make some nice, uniform-looking, fries like I get in restaurants.

They’re not long but they are uniform.
She cuts them using the Vadilla Chopper from Bed Bath Beyond.

@sidsmom Well, that is more like it. At least they are uniform! Would like them to be longer, like traditional fries, but if I can't find the longer size, then I think I'm off to Bed, Bath, and Beyond! ha!
I much prefer using something like you are showing.

Sweet potatoes will be denser than white potatoes
so keep your receipt in case it doesn’t work.

With a little practice you will get them even. As much as I hate to waste food, I will cut off the thin areas to keep them uniform. OCD! I love sweet potatoes and they are supposed to be the 'perfect' food!
Did you see my "baked sweet potatoes with bacon and brown sugar" recipe in the Recipe game? Yum!

@sidsmom That is similar (or maybe exactly!) what I was seeing on the Internet, but didn't know anyone who had it. The length of the fry is much better.
And, yes, the sweet potatoes are denser and were giving me a bit of a hard time cutting them. Of course, my knives might not be the sharpest, but they do well with anything else.
Believe what you have posted would work quite well. Hmmmm.....definitely the better of the solutions so far.
