Received my Sous Vide Cooker

The Courtis Stone sous vide stick I ordered arrived yesterday.  Today I tried it out by making salmon.  The idea is simple enough.  Put appropriate amount of water in a pot, clip the stick on the inside, set temperature and time and push start.  When it comes up to temp (you can see that on the display area), add the plastic bag with the salmon and any seasoning and clip the bag to  the side of the pot.  When it is done, there will be a beep and your dinner is ready.  Salmon was perfectly cooked.

 

But I think I will return it because there is just an other gadget to have to clean, descale, etc.  After reading a lot of reviews, it sounds like a real great thing to have and you can cook for the whole family.

 

Some of these things work via wifi.  Perhaps some day I will try that just to see how it works.

I have the anova immersion circulator with bluetooth. I quit using it over bluetooth though, it's easy to set the unit itself and I don't need to monitor the temp when it's running.

@jaxs mom  I have been wondering how these work.  How did you like the food vs. steaming?

 

P.S.:  I think this will be the next popular thing that people just have to have (like me).

I don't really steam much at all, just artichokes. I've cooked a lot of things sous vide in the time I've owned it. I did ferment yogurt sous vide, but I didn't think it was easier or better than my usual method of dry heat. I only tried vegetables once, carrots and they needed more time I think. I basically just sous vide meat at this point.

I have a friend who has one and she loves it.  She cooked prime rib in it last Christmas.  For some reason it does not appeal to me.

I will definitely  return the one I have.  Not because it doesn't work, but because it is another gadget and I have only a galley kitchen.  Will be looking into some others like a pressure cooker which has a sous vide function or a container that is at the same time a sous vide cooker and I don't need an additional container.  Saw them at Amazon and the reviews are as good as for any sous vide stick.

You're going to be very limited on how much you can sous vide in something that size. The benefit of the stick immersion circulators are that they can be used in a variety of container sizes. Plus with sous vide cooking taking so long ( some things take 24 hours or more), it's nice to cook in volume and freeze what you don't need now for later. 

 

My standard sous vide container is a 12 qt cambro and I can't fit more than 3 packages in it or one small roast, because you need a minimum amount of water to circulate well around the food packages.

@jaxs momThat's okay.  I live alone.  But I will probably try a larger one like the roaster which comes with a rack.  Could not copy the picture from Amazon.  It won't pressure cook though.  Still have to think about it for a while.

I got a great 11 in 1 from Evine last year..it was under $100 and it works fab! The brand is Cook's Companion, and I cnnot rave enough about it-
