I'm watching this now on Gourmet Holiday. If anybody is thinking about these - OMG, they are so awesome!
They're huge, too. When I cook one it's all I can eat. They are tender and flavorful with just a smidge of seasoning. I had a little learning curve for how to cook them but by the second time I was a pro.
I have them on AD, so I'm glad to see they still have them.
Every time I eat one I simply must eat another one the next day!

CB, thanks for the recommend. I watched the video and I trust your foodie opinion so I ordered it A/D.
Please share what you learned about how to cook them. I can see several options I'd like to try -- a thin coating of egg and cracker crumbs and into the air fryer, or be decadent and pan fry. I see these sliced in stir fry and sheet-pan meals or a simple grilling.
One reviewer complained about the sodium but one out of many wouldn't sway me. Have you added other ways to add flavor?

I just do a pan-fry thing. Smidge of butter and olive oil as pan heats up (nonstick, but it doesn't have to be I suppose) on just a smidge under med-high. Brown well on both sides. Turn heat down to med-low and cover for 7-10 minutes.
That's kinda sorta based on the instructions that come with them but you know how you usually need to tweak here and there. I just add on only one side some of this KC Steaks steak seasoning (of which I have a bunch from over the years!). I think it's pretty much s&p and garlic. That's all it needs or even just s&p.
I never noticed them being salty at all. Maybe they added a lot of salt? Like I mentioned I just season one side with a light pinch.
They are so lovely. BTW, I noticed that some of what the vendor was cutting looked a little more rare than what I do. I'm still from the school of cooking pork fairly well done. Mine look more whitish than pink but they are still beautifully tender and tasty. The ribeye cut is my favorite cut of beef steak, so I figured these had to be good. I feel like the quality is very nice and I LOVE that they come individually vacuum-sealed!
I hope you like them! I kind of hate to recommend things because I will be scared until I know that the person doesn't like it.

When the Rastelli guy cut it with a fork, that clinched it. Don't worry about me not liking it, I love pork in most of the common ways we eat it. No tripe for me, though. I'm glad it can handle some extra seasoning as I love the Penzey's "Ruth Ann's Muskego" seasoning and their pork chop seasoing so I'd like to be able to use them on these steaks.
The Costco pork loin steaks are too thick and easy to dry out to get that middle cooked so these will be just right.

You will love how tender this meat it. Start out with just a light pinch of seasoning and see what you think. I also manipulate it around a small pan so that I get carmelization all around the sides where there is a (little) bit of fat.
I also thaw them out before cooking. I don't know what they recommend, but that seems best to me. The pork is raw. If you tried to pan saute it from frozen you'd probably have to get the outsides completely black to get the inside done. That wouldn't be good at all.
I thaw one and then a little bit before cooking I take it out of the refrigerator to get a little less cold before cooking.

@chickenbutt I am glad you liked these pork steaks. They looked very good.
I just ate the first of 15 Rastelli sirloin burgers. They were only good because of the toppings I put on.

@momtochloe Actually, they did have a nice delicate smokey flavor from the bacon I guess. But they were so greasy and full of grizzle. The burger was less than half its size when it was done.

Thanks so much @CLEM and I am sorry to hear of the quality as I always heard so many nice things about Rastelli. My favorite burgers will always be Bobby Chez's. For me, that is a burger worth the price.
Clem do you have an Aldi by you as they had fresh bacon cheddar burgers on special last week and they were terrific. Not sure if they will carry them through the summer but if you have access to an Aldi and see them there I would give them a try.
