Make sure to use a rack. Duck is very fatty so it needs good drainage.

Get your flu shot...because I didn't.

Since I was going to be home all day I settled on marva's suggestion and used the low and slow directions on the Hungry Mouse website. It was delicious. I wish I had cooked two ducks!! I am thinking duck tacos maybe??

Hi DiAnne,

Here is the best Peking Roast Duck Recipe I have ever tried.

I usually serve it with fried rice which is easy to make and I put in plenty sliced fresh scallions.

The ingredients in the recipe can easily be found in Chinese markets, and some Chinese produce stores also carry them, as well as on the internet.

The internet web site link below gives full instructions with photographs, so if you have the time to invest and love a good Peking Duck, then this recipe is wonderful to try.

The end result will be just as delicious as the Peking Duck served in the most elite Chinese Restaurants.
