Questions about Tempura - vegetables and shrimp

I hadn't made it in many years until a few months ago. It was the utter utter favorite meal when the kids were pre-teen and teens. They thought it was a terrific treat, and it seemed like a ot of work at the time but the happy times at the dinner table on those nights were well worth it!!

I made DH and I some a while back and I wasn't too happy with it. I used the tempura mix in the box bought at the grocery store. We like the coating thin and I thought it was pretty runny in the bowl, but after deep frying it, it came out thick and it was not what I thought it would be. DH loved it though. Of course I slopped the batter all over the stove top and the counter so the clean up was something else. Yipes, was it!

Do any of you make Tempura and do you make up your own batter or just what? Can you offer me any tips or hints to making it perfect, or at least better than I've been making. I'd like a thin batter so you can taste more of the veggies and shrimp than so much of a coating taste. TIA AnneMary

In our house the husband does most of the cooking because I can't stand it. He makes this probably about once every 2 or 3 months. I know he uses seltzer water for the liquid. It comes out crispy that way. We then dip all the zucchini and onions and the shrimp in a watered down version of soy sauce. It is one of his best meals he puts on the table.

My mom always made her own batter with plain flour, and ice water. I make tempura, and learned it's important not to make the batter ahead of time.
