Okay, this is embarrassing to have to ask because I know this is academic in baking and I should know this without having to ask, but forgive my ignorance or memory loss as I ask anyway.
When a recipe calls for "X" cups of "sifted" flour, does that mean that one is to sift an amount of flour FIRST and then measure the "X" cups out of the sifted amount OR to measure the "X" cups the recipe calls for and then sift that portion?
I know it makes a difference somehow but it hit me when I started a recipe that simply said "4 cups sifted flour" and had a mental block in remembering the proper method / sequence for the sifting process.
