Question for a Jewish Chopped watcher

Last night's show had one chef that owned what I thought was a Kosher restaurant on the edge of a Hasidic Jewish neighborhood in New York. Yet he specialized in pork and shell fish. What am I missing here? Sorry if I misspelled Hasidic.
