it is definitely possible and the results are fine.  The filling can be poured into a pie pan and baked in the oven. Check out the recipe on the Wholesome Yum website for Crustless Pumpkin Pie.  This is one of my go to sites for keto recipes.  With keto, a alternative sweetener would be used, but Maya gives the recipe using sugar as well. If that's not an issue for you.

The roasting is before you add the liquid (evap milk) and eggs.

 

But I think once it has cooled....add the other ingredients and bake again!

 

I think it would be delicious!!!
