Question about freezing leftovers.

Every Thanksgiving my daughter insists on doing the cooking. Not complaining. However, she always makes too much food. This year was no exception. Is it possible to freeze turkey gravy, stuffing or mashed potatoes? By the way, I have a Foodsaver. Thanks for anybody with suggestions.

Yes, to freezing all of the foods listed above. I would suggest putting a date on the packaging when you freeze it, so that you remember when you froze it. Enjoy your leftovers! Cat Happy

I never freeze leftovers for it never tastes that good after being reheated

Good that you have a Foodsaver!  I freeze all kinds of stuff and BECAUSE I vacuum seal it, it's as good as brand new!

 

With something that is going to be smooshy, like mashed potatoes or other soft foods, I would freeze them in whatever serving size desired, in Lock & Lock containers, then pop them out of the containers and into your vacuum sealing bags and vac seal.   

 

To be honest, I've never frozen mashed potatoes, but I don't see any reason it wouldn't work well as long as you are vacuum sealing them.

 

I love potatoes and sometimes even crave them so, while I make a huge batch of mashed potatoes for Thanksgiving, i will go through them fast enough.  They nuke up super well, and I'm very picky.   As long as they are stored in a good quality AIRTIGHT container, like Lock & Lock, unless being frozen, they last a while.

Everything you mentioned can be frozen, however potatoes often become "mealy" when refrigerated or frozen because the starch changes to sugar.  If you've added sour cream to them you probably won't be able to tell it.  I often keep "twice baked" potatoes in the freezer (they're made with sour cream, bacon bits, and have cheddar on top).

I agree with putting the soft foods in containers, then transferring them to the bags for sealing.  My mashed potatoes are great re-heated.

Having the last of mine from the fridge tonight (no pies, all long gone) but still have some of everything in freezer.

Oh I freeze just about anything! We just got tired of eating turkey leftovers so off they go to the freezer for another day! I freeze EVERYTHING. Never had a problem with it not tasting like freshly made! It actually tastes better! Woman Happy
