Question about food storage...

I hope this isn't a silly question, but I have been wondering about when you buy (refrigerated) food and the "use by" date is say for example March 1, 2011. I sometimes freeze the item and then thaw it later when I am ready to use it.

Once it is thawed, when do I need to have it "used by"? It is usually a larger amount that can't be used in one meal...
