Our favorite is pot roast with baby carrots and small potatoes topped with dry Lipton Onion Soup, placed in a cooking bag and put in the crock pot. I would like to have some company over and want to do an additional vegetable in the pot roast and eliminate the potatoes. I want to do baked or scalloped potatoes instead this time. If I were to add fresh green beans in with the baby carrots (which I usually do for the duration of the cooking) do you think the green beans would turn out alright or be way overcooked? TIA

I think your green beans would be way overcooked. You could steam them separetly and mix in just before serving. 

Additional vegetables added with the carrots could be turnips, mushrooms, leeks, butternut squash, parsnips.

Totally agree with @Dorothy11. If you want to include a veggie with the carrots in the same cooking time you need to include a different root vegetable or something with similar density. So her suggestion of parsnips, similar "underground" types is perfect and broccoli or cauliflower will do well with carrots, also. They are dense and will stand up to longer heat.

Whether it's oven roasting or crock pot, you want to find compatible cooking times for two vegetables.

Consider sweet onions and mushrooms.  You may also consider doing mashed potatoes for the gravy from the roast or rice.

How about wedges of onion and chunks of sweet potato?

@Tigriss Unfortunately, my dh won't touch mushrooms. I love them, though. Thank you for your suggestion.

@Sooner Thank you. I do add onion, but the sweet potatoe sounds like a nice addition.
