It's 3 weeks now since we are on this food plan.  My husband doesn't have cramps anymore at night - he used to have bad ones every night, and that's a huge thing for him.  That is caused by Neuropathy, his pain management doctor said.  The bottom of his foot he can feel now, couldn't before, he sees that doctor in June, I think, and we'll see what she says about taking him off the meds for that.

She claims two of her patients what have Neurapathy are not off their meds.  This plan helped them so much.

Correction:  Those patients of hers she talked about are OFF their meds.  That is fantastic indeed!

It's jazzyvegetarian dot com.  There are many recipes on there and alot of info.

Ok - here is the latest for my husband's improvement from eating this way.  First he has no more leg cramps at night, when he goes to the gym for swimming, his foot that has the Neuropathy in, would turn sideways and he'd have to quit swimming.  Now it doesn't do that anymore.  Lately now since Monday he doesn't need his cane anymore he feels more secure on his feet, and he's got enough energy to make suppers, with vegan foods.  Who would have ever thought?

Plant based foods are healthy and good.

 

You just have to be careful not to buy processed foods.  Many imitation foods such as plant based " meat" is full of garbage, sodium and preservatives.

 

All these additives defeat the purpose of eating healthy. Choose fresh veggies, fruits, grains and legumes.

 

You also have to read up on how to make a complete protein from plants...such as Beans and rice together.  You might also need a Vitamin B12 supplement.

I do not think I could tolerate it I am allergic to soy and I think I would have a hard time finding food to eat

Yes, we are careful not to buy those processed foods.

They are junk, if you read the labels.  Sure, they taste good, but are not good for us.  

He made black bean burgers the other day, it was a lot of work, but they were delicious.  Gosh! you have to drain the black beans and then dry them in the oven for a few minutes!  But they need to be that dry to make the burgers.  Thinking we could make some steps ahead of time, so not work on them all afternoon.

 

Haven't used soy at all yet.

@I am still oxox - It is a learning curve finding ways to eat plant based but you learn along the way and it becomes much easier to find foods you like and ways to incorporate them into your diet.
